German Chocolate Cake for breakfast! This is a chocolate baked oatmeal with a caramel-coconut-pecan filling and topping – and it’s entirely gluten-free and vegan.
Ingredients
⅔ cup pumpkin or squash puree
2 tablespoons cocoa powder
4 teaspoons maple syrup
1 teaspoon vanilla extract
1 cup rolled oats
¾ teaspoon baking powder
Pinch of salt
⅔ cup almond milk
4 – 5 heaping tablespoons Coconut Pecan Caramel Filling
1 – 2 tablespoons shredded coconut
8 pecan halves
