Single-serving pancakes with a caramel, coconut and pecan topping. This breakfast is completely vegan, and pretty healthy too!
Ingredients
For the Pancakes:
1 ½ teaspoons flaxseed meal
1 tablespoon water
¼ cup rolled oats
½ cup pumpkin or squash puree
1 tablespoon cocoa powder
¼ cup almond milk
2 teaspoons maple syrup
½ teaspoon vanilla extract
¼ cup spelt flour
1 teaspoon baking powder
Pinch of salt
½ – 1 tablespoon shredded coconut
1 tablespoon chopped pecans
Toppings:
Coconut Pecan Caramel Topping (recipe below)
Shredded coconut
Pecan halves
