Ginger Spiced Pear Upside Down Cake

2 small pears, peeled, cored and sliced in ¼ inch thick wedges
¼ cup organic brown sugar
¼ cup coconut oil, from the jar
1½ – 2 tsp ground ginger (more or less depending on preference)
FOR THE CAKE:
¾ cup + 2 Tbs almond milk
1 tsp apple cider vinegar
1 cup oat flour
1 cup unbleached cake flour (or gluten free all purpose flour)
1½ tsp. baking powder
½ tsp baking soda
¼ tsp sea salt
½ tsp ground cinnamon
heaping 1 tsp ground ginger
pinch of ground cloves
2 tsp vanilla
3 Tbs unsweetened applesauce
½ cup + 2 Tbs maple syrup
2 Tbs brown sugar
3 Tbs coconut oil, melted
