This is a savory Fall soup. Super healthy and vegan too.
Ingredients
1 large butternut squash, halved and baked
2 Tbsp olive oil
1 onion, chopped
3 ribs of celery, chopped
4 cloves of garlic, peeled
1 apple, peeled, cored and chopped
1 1/2 Tbsp minced ginger
1 14 ounce can full fat coconut milk
4 cups veggie stock
Salt to taste
