Gingerbread Cookie Dough (Healthy!)

Remember the healthy cookie dough I posted? This is a gingerbread version. Packed with flavor, but still as healthy as before, I recommend doubling the batch because it is hard to share.
Ingredients
1 can chickpeas
1/4 cup nut butter (I use pb2)
2 tbsp vanilla
1/4 almond milk (regular milk would work too)
1/4 cup oats
1/2 a baked sweet potato
1/8 tsp salt
1 tbsp cinnamon
1 tsp ginger
1 tbsp molasses
brown sugar or baking stevia to taste
chocolate chips!
