These gluten-free, gum-free bread rounds almost taste like pizza dough! The potato adds moisture and bouncyness, which is often missing from gluten-free bread. Serve these with soup, salad or just by themselves!
Ingredients
2 cups warm potato water (divided)*
2 ¼ teaspoons dry yeast (1 packet)
1 teaspoon brown sugar (unpacked)
3 tablespoons chia seeds
1 large potato, peeled, cooked and mashed
2 ¼ cups gluten-free all-purpose flour
½ cup rice flour, plus extra for kneading
1 tsp salt
2 tablespoons olive oil
¼ – ¾ cup polenta, for rolling
*By “potato water”, I mean the water the potato was cooked in
