Gluten-Free Coconut Cake
A dessert worth a thousand words because it is so delicious! Did I mention it is gluten free?
For the Cake:
1 C coconut milk
6 large egg whites
1 Tbsp vanilla extract
2 1/4 C gluten free flour
1 tsp xanthan gum
1 3/4 C granulated sugar
1 Tbsp + 1 tsp baking powder
1 tsp fine sea salt
3/4 C solid coconut oil (or palm shortening)
3/4 C shredded coconut
For the Filling:
1 C prepared coconut custard
1 C So Delicious CocoWhip (or homemade coconut whipped cream)
For the Frosting:
1/2 C vegan butter (I use soy-free Earth Balance spread)
1/2 C shortening
3 1/2 C powdered sugar
1 tsp vanilla extract
2 Tbsp coconut milk
1 1/4 C toasted coconut
