A savory gluten free breakfast option – delicious sweet potato waffles with arugula, avocado and poached egg. This is all held together by refreshing lemon olive oil.
Ingredients
Waffles:
1/2 large sweet potato or 1 medium sweet potato
1/2 cup grated cheese
1 egg
1/2 tsp tumeric
2 tbsp milk (dairy or non-dairy, up to you! I used almond milk)
1/4 cup rice flour
Toppings:
arugula/rocket
1/4 avocado
2 eggs
1 tbsp white vinegar
2 tbsp olive oil
juice of 1/2 lemon
