Green Beans with Garlic Scapes Aioli is a healthy side dish that is pretty enough for a dinner party but easy enough to make for everyday.
Ingredients
1 large egg, at room temperature (see note for a vegan option)
2 teaspoons fresh squeezed lemon juice
¾ cup neutral flavoured oil (I like grape seed)
¼ cup finely minced garlic scapes
1 small clove garlic, finely minced
A pinch of sea salt, to taste
1 lb. green beans, washed and trimmed
1 teaspoon olive oil
