This gazpacho recipe is perfect for Summer and it is a great split pea soup recipe. Spit pea soup is for more than just Winter. Mint infused split pea soup.
Ingredients
4 cups water
2 cups green split peas
1 large shallot, minced
2 ½ tbsp. unsalted butter
3 cups low sodium vegetable broth
3 mint sprigs, total stem length suggested to be at least 8”
½ cup heavy cream
Fresh ground salt and pepper to taste
¼ cup sour cream
¼ cup half & half
