Healthy Morning Glory Muffins that are surprisingly moist and full of flavor. Naturally gluten-free, oil-free, dairy-free, and refined sugar-free.
Ingredients
2 medium-size ripe bananas (approx. 1 cup)
1/4 cup almond milk
1 tablespoon vanilla extract
2 eggs
4 tablespoons almond butter
1/4 cup pure maple syrup
1/4 cup coconut sugar
2 and 1/4 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
2 cups shredded carrot (approx. 3 large carrots)
1/2 cup raisins
1/2 cup chopped walnuts (optional)
