Healthy German Chocolate Cake
A rich and dense German Chocolate Cake with Coconut-Pecan filling and topped with shredded coconut. Gluten free and vegan friendly.
For the chocolate cake:
1 cup brown rice flour
½ cup almond flour
1 cup cocoa powder
2 tablespoons arrowroot powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon sea salt
½ cup coconut oil, melted
1 cup coconut sugar
1 cup unsweetened applesauce
1 cup freshly brewed coffee
½ cup pure maple syrup
3 eggs, at room temperature, lightly beaten
1 teaspoon pure vanilla extract
1 cup almond milk
1 tablespoon raw apple cider vinegar
For the coconut-pecan filling:
½ cup pitted Medjool dates (4 to 5)
2 cups unsweetened shredded coconut
1 cup chopped raw pecans
1 can full-fat coconut milk
3 tablespoons coconut oil
1 tablespoon pure maple syrup
1 teaspoon pure vanilla extract
Garnish: ½ cup unsweetened coconut flakes, toasted
