This tart is a perfect example of a healthy splurge. It tastes rich and decadent, but it is lightly sweetened, contains no refined flour and is made with small amounts of healthy fat.
Ingredients
1 1/2 cups graham cracker crumbs, from 100% whole grain graham crackers
1/2 cup crystallized ginger, finely chopped
pinch of salt
3 tablespoons coconut oil
1 large egg white
2 cups plain nonfat Greek yogurt
1 1/2 tablespoons honey
1 pint blueberries
