A Simple Hygge Macrobiotic Bowl contains healthy fats, veggies, fiber, carbohydrates, plant based protein, and fermented veggies.
Ingredients
½ cup cooked brown rice or wild rice
½ cup steamed carrots
½ cup steamed broccoli
½ cup steamed zucchini
½ cup steamed red peppers
½ cup cooked chickpeas, or organic tofu or tempeh
2 heaping tablespoons raw tahini
⅓ cup fermented veggies like kimchi or sauerkraut
2 tablespoons soaked dulse, hijiki, or nori seaweed
Pinch of sea salt and black pepper to taste
Garnish options: fresh chopped parsley, sesame seeds, and a splash of coconut aminos
