Kale + Enoki Mushroom Salad

The inspiration for this salad was mostly from the kale, but then I spotted these enoki mushrooms in the grocery store and it all sort of came together. It takes no time to make and is completely delicious. It is fresh, flavourful, and vibrantly fall.
Ingredients
4 cups packed kale, washed and ripped (this is apprx. 1 bunch of kale)
juice of 1 lemon
1/4 tsp salt
1 tbsp olive oil
1/2 – 1 tbsp nutritional yeast
pepper to taste
apprx. 150g enoki mushrooms
1/2 tbsp sesame oil
splash of balsamic vinegar + salt and pepper to taste
1/2 an apple, sliced
a handful of pomegranate seeds
