Kerala Special Ginger Curry is an enhanced version of the traditional Kerala Inji Curry or Ginger Pickle served during Sadhyas.
Ingredients
Ginger : 100 gms
Coconut oil : 1 + 1 tbsp
Grated Coconut : ½ cup
Kashmiri Chili Powder : 2 tsp
Turmeric Powder : ½ tsp
Tamarind (Sambar Puli) : one lemon sized ball
Jaggery : 1 tbsp or more
Small Onion : 4
Green chili : 2 – 3
Dry Red Chili : 2
Curry Leaves : few
