Gluten-free and vegan baked oatmeal flavored with lemon zest, and studded with currants and pistachios. It’s oatmeal with an exciting citrus twist.
Ingredients
½ cup mashed banana (~ 1 very ripe banana)
¼ cup applesauce or zucchini puree
2 teaspoons maple syrup
1 ½ teaspoons vanilla extract
1 rounded teaspoon lemon zest (~ Zest of 1 lemon)
5 teaspoons lemon juice (~ Juice of 1 lemon)
1 cup rolled oats
¾ teaspoon baking powder
Pinch of salt
2 tablespoons currants
2 tablespoons chopped pistachios
⅔ cup almond milk
