Lentils cooked in a thick, delicious spicy sauce and served on a bun.
Ingredients
1 cup brown or green lentils, rinsed and sorted
3 cups water
2 tablespoons olive oil
1 onion, chopped
1 cup fresh or frozen corn
1 stalk celery chopped
2-3 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon paprika
2 teaspoons Dijon mustard
1 28 ounce can diced no-salt-added tomatoes
½ cup tomato paste
1 tablespoon apple cider vinegar
2 teaspoons liquid smoke
2 tablespoons low sodium soy sauce
2-3 grinds of black pepper
8 toasted whole wheat buns
