A vegetarian take on a classic British dish.
Ingredients
300g green lentils
2 large sweet potatoes, peeled and cubed
Salt and pepper
50g grated cheese (optional)
A knob of coconut oil
1 onion, peeled and chopped
2 cloves garlic, peeled and chopped
1 carrot, peeled and cut into very small cubes
1 stick celery, cut into very small cubes
1tsp ground thyme
1tsp ground cumin
½ tsp chilli powder
1 can chopped tomatoes
