Mauritian tofu daube

This tofu daube is a hearty, comforting, homey dish from the Island of Mauritius that you’ll want to eat over and over. This dish is traditionally made with beef, but I made it with tofu instead, it as an intense tomato flavor, blended with the hearty potato and the fragrance of cinnamon and fresh coriander.
Ingredients
1 onion, chopped
1 tbsp fresh ginger, chopped
3 garlic cloves, chopped
½ tsp fresh thyme
1 tsp sambal oelek
½ tsp cinnamon
1 can (796ml) diced tomatoes
2 potatoes, diced
225g firm tofu, diced
½ cup frozen peas
handful of fresh coriander
salt
