Mini Frittatas To Go

Tofu frittatas baked in a muffin tin for an easy breakfast to grab and go.
Ingredients
2 blocks firm tofu, drained
2 tsp olive oil
1/2 onion, diced
2 cloves garlic, minced
1/2 bell pepper, seeded and diced
2 cups greens, sliced thin (collards are good)
1 roma tomato, diced
1/2 cup garbanzo bean flour
2/3 cup nutritional yeast
1 tsp baking powder
2 tbsp soy sauce
2 tsp dried oregano
1 tsp dried parsley
1/2 tsp turmeric
1 tsp salt
1/2 tsp pepper
2 tsp liquid smoke (optional)
