Mini Vegan Pecan Pies

Indulge in these sweet miniature pecan pies. The crust is sweet and the filling is rich and decedent like a true pecan pie should be!
Ingredients
CRUST:
2 cups oat flour
½ tsp baking powder
1 tsp cinnamon
½ cup pitted dates, soaked and drained
½ cup applesauce
¼ cup maple syrup
3 Tbs coconut oil, melted
FILLING:
2 Tbs coconut oil
2 Tbs soy milk (coconut milk will work as well)
¼ cup + 2 Tbs maple syrup
2 tsp molasses
½ tsp vanilla
1 Tbs corn starch + 2 Tbs cold water
1¼ cup pecans, roughly chopped
