Miso-glazed sweet potato sushi

If you love sushi, but are not too keen on consuming processed white rice, this recipe is for you! It uses nutritious red rice and no refined sugar yet it’s big on flavour thanks to sweet potato marinated in a simple miso glaze.
Ingredients
SUSHI:
6 nori sheets
2 cups red Thai rice
1 medium sweet potato (about 450 g / 15 oz)
½ large cucumber, cut in half-moon slices
4 tbsp rice vinegar
1 tbsp maple syrup
wasabi
tamari (for GF version) or soy sauce
pickled ginger, store bought or homemade
MISO GLAZE:
3 tbsp miso paste (I used red)
1½ tbsp rice vinegar
1 tbsp maple syrup
2 tsp sesame oil
