Ingredients
For the Mushroom Lentil Gravy:
1 cup low sodium vegetable broth
1/2 cup green lentils
2 tablespoons olive oil
1 Small yellow onion, diced
6-8 button mushrooms
2 tablespoons low sodium soy sauce (or tamari, if gluten-free)
1 tablespoon dried rosemary
1 cup low sodium vegetable broth
1 tablespoon corn starch or arrowroot powder
1 large handful of kale, chopped
For the Cauliflower Mash:
1 head of cauliflower florets
1 tablespoon butter (vegan or regular)
1/2-3/4 cup milk of choice
salt and pepper to taste
