My Favourite Carrot Cake

This is my favourite carrot cake!! You won’t be able to believe that there is no added oil or butter in this recipe!

4 eggs
1 1/4 cups unsweetened applesauce
1 cup granulated sugar
1 cup brown sugar
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
2 tsp ground cinnamon
3 cups grated carrots
1/2 cup coarsely chopped pecans (optional)
8 oz light cream cheese
3 cups confectioners sugar
1 tsp vanilla extract
1/2 cup coarsely chopped pecans for sprinkling (optional)
