Not-cho Cheeze
While this is slightly more work than opening a jar or driving to a fast food taco chain, it’s still pretty simple. This recipe also makes it SUPER easy to rationalize having nachos any time of day. Add some black beans and salsa, cilantro and tomatoes, then poof!! Plate full of veggies.
1 ½ cup potato, peeled and cubed (for me this tends to be one medium-large potato, or 2 small potatoes, though precision isn’t needed here.)
2 small/medium (or 1 large) carrots, peeled and chopped
½ cup nutritional yeast (or more, to taste)
½ teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon cumin
⅛ teaspoon tumeric (optional, mostly for color)
dash cayenne
salt as needed- though it does need some! Start with a little, and add to taste!
water as needed
