Oatmeal and Berry Pancakes

These hearty, oaty pancakes are very healthy and surprisingly filling. They’re also vegan and gluten-free (if you use certified gluten-free oats). If you ask me, pancakes are the perfect start to the weekend (or really any day of the week)!
Ingredients
2 tablespoons ground flaxseeds
¼ cup water
¼ cup walnut halves
1 ½ cups rolled oats (divided)
2 very ripe bananas
2 teaspoons vanilla extract
¼ teaspoon molasses
½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup almond milk
2 ½ teaspoons baking powder
1 cup fresh blueberries
5 – 6 fresh strawberries, thinly sliced
Maple syrup and extra berries, to serve
