Oatmeal Breakfast Cookies

These cookies are packed with oats and peanut butter, as well as some medjool dates. As there’s very little oil or sugar, they’re much healthier than regular cookies. Plus, they’re chewy and addictive!
Ingredients
5 medjool dates, chopped
3 tablespoons water
¾ cup rolled oats (divided)
1/3 cup natural peanut butter
1 egg yolk
2 tablespoons canola oil
1 tablespoon milk
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
¼ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
2 teaspoons almond meal
2 tablespoon brown sugar
2 tablespoons chocolate chips
