These gluten-free and healthy oatmeal pancakes are surprisingly full of flavor. With a hint of lemon zest and honey, they’re a lovely start to a fantastic day. Also, this recipes makes a single-serving, so go ahead and make yourself a stack!
Ingredients
1/3 cup rolled oats (gluten-free if necessary)
1 tablespoon slivered almonds
1 egg
Tiny pinch of salt
2 tablespoons Greek yogurt
¼ teaspoon lemon zest (lightly packed)
¼ teaspoon vanilla extract
1 teaspoon honey
¼ teaspoon baking powder
Blueberries, chopped nuts and extra honey (or maple syrup), to serve
