A childhood favorite, these Oatmeal Raisin Cookies are vegan and gluten-free and use almond pulp from making almond milk so you can have your cookies and milk freshly made!
Ingredients
~1½ cups wet almond pulp (from 1 round of almond milk)
½ cup gluten-free oats
¾ tsp cinnamon
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
2 Tbsp ground flax + 6 Tbsp water
¼ cup coconut oil, melted
⅓ cup maple syrup
⅓ cup coconut sugar
1 Tbsp. almond butter
1 tsp vanilla extract
⅓ cup raisins
Optional: ¼ cup vegan chocolate chips
