This One Pot Minestrone Pot Pie with Whole Wheat Biscuits is a hearty, comforting dish that’s packed with veggies and healthy ingredients!
4 cups low sodium vegetable broth
1 14 oz can diced tomatoes
1 14 oz can cannellini beans, drained and rinsed
1 tablespoon olive oil
1 small yellow onion, diced
1 medium carrot, diced
4 celery stalks, diced
1 medium zucchini, diced
2 cloves of garlic
2 cups chopped kale leaves
1 teaspoon dried oregano
1 teaspoon dried basil
salt and pepper
for the biscuits
2 cups white whole wheat flour
4 teaspoon baking powder
½ teaspoon salt
1 teaspoon dried rosemary, chopped
¼ cup coconut oil, solid
¾ cup milk of choice (I used unsweetened soy milk)
1 teaspoon apple cider vinegar
1 tablespoon of olive oil
