Onion Gratin with Rosemary and Thyme
This delicious low-carb and gluten-free Onion Gratin with Rosemary and Thyme is a perfect side dish for Thanksgiving or a special meal.
8 small or 6 medium-sized white, yellow, or Vidalia onions
olive oil, for brushing onions
1 tsp. finely minced fresh rosemary (or use 1/2 tsp. dried rosemary, finely chopped with large knife if you don’t have powdered rosemary)
2 T minced fresh thyme leaves (or use 1 T dried thyme, finely chopped with a knife if you don’t have ground thyme)
6 T mayo, regular or light
1 T fresh squeezed lemon juice
1/2 tsp. Dijon mustard
1 cup Pizza cheese blend
3 T grated Pecorino-Romano cheese (or use grated parmesan)
fresh ground black pepper to taste
