Key Lime Pie is always refreshing and delicious, and this paleo version is certainly no exception. Although there are more ingredients in this recipe than some of the others, it is definitely worth making because the flavor is so good.
Ingredients
Crust:
1 cup pitted dates
⅓ cup raw walnuts
⅓ cup raw cashews
⅓ cup raw almonds
1 tsp pure vanilla extract
½ tsp salt
¼ tsp cinnamon
Zest of one lime
Filling:
2 cups raw cashews (pre-soaked)
⅓ cup lime juice
¼ cup raw honey (vegan hack: maple syrup)
1 tsp pure vanilla extract
¼ tsp salt
¼ cup water
Zest of one lime
