Panettone Breakfast Pudding
This “breakfast pudding” is similar to a bread pudding, or a baked French Toast. The Panettone is a festive touch for the holiday season. While I ate this for breakfast, it would also be a nice dessert.
2 slices whole-wheat (wholemeal) bread, crusts removed
1 teaspoon jam/jelly/preserves
1 slice Panettone (about 90g/3¼ oz)
1 egg yolk
½ teaspoon orange zest
1 teaspoon brown sugar
¼ teaspoon cinnamon
Pinch of mixed spice or pumpkin pie spice (optional)
Tiny pinch of salt
¼ teaspoon vanilla extract
½ teaspoon brandy extract (optional)
2/3 cup milk
1 tablespoon raisins
Up to ¼ cup berries of your choice
1–2 teaspoons chopped pistachios and/or almonds
½–1 teaspoon demerara sugar (or raw sugar)
