Patatas Bravas
Patatas Bravas is a classic Spanish potato dish that features a spicy, flavorful tomato sauce. With roasted potatoes instead of the traditional fried potatoes, this is a healthier take!
For the Potatoes:
2 pounds small yellow potatoes, cut into bite-size pieces (unpeeled)
2 tablespoons olive oil
Pinch of salt
For the Tomato Sauce:
2 tablespoons olive oil
1 small yellow onion, diced
2 large cloves garlic, minced
1 14 oz. can diced tomatoes
1 tablespoon pureed tomatoes
2 tablespoons water
2 teaspoons smoked paprika (regular paprika is fine if you can’t find smoked)
½ teaspoon cayenne pepper
1 teaspoon granulated sugar
½ teaspoon salt
Optional Garnishes:
Mayonnaise
Chopped parsley
