Peach and Rhubarb Crisp

This is my healthier version of a fruit crisp (otherwise known as a fruit crumble). There’s no butter, no oil, and no refined sugar! Perfect for breakfast, dessert, or really anytime of the day.
Ingredients
For the topping:
3 dates (dried), finely chopped
2 tablespoons hot water
½ teaspoon vanilla extract
2 tablespoons hazelnuts (approx. 15)
¼ cup rolled oats
2 tablespoons oat flour
¼ teaspoon ground cinnamon
2 teaspoons maple syrup
For the filling:
6 oz. (170g) rhubarb (approx. 3 stalks)
3 peaches
1 teaspoon cornstarch (cornflour)
2 tablespoons apple juice
2 tablespoons water
¼ teaspoon vanilla extract
