Peanut Butter and Banana French Toast (Vegan and Gluten-Free)
It’s French toast, but it’s vegan! And, unlike regular French toast, it’s full of banana and peanut butter flavor!
French toast is definitely my favorite way to use store-bought gluten-free bread. Since it’s pretty dry, GF bread is perfect for soaking in custard and pan-frying. Alternatively, regular bread can be used (but make sure it’s 2-3 days old)
1 very ripe banana
3 – 4 tablespoons peanut butter*
¾ cup almond milk
1 tablespoon ground flaxseeds
¼ teaspoon ground cinnamon
1 teaspoon vanilla extract
4 slices gluten-free bread**
Maple syrup and/or extra peanut butter, to serve
* If you would prefer to use PB2 (powdered peanut butter), mix 3 – 4 tablespoons PB2 with 2 tablespoons water before adding to the blender.
** Alternatively, use regular bread that is 2-3 days old.
