These Peanut Butter Coconut Macaroons are from the new e-book Vegan Peanut Butter Desserts by the Lazy Vegan Baker and are both vegan AND gluten free!
Ingredients
1/3 cup gluten free flour (I used oat flour)
2 1/2 cups unsweetened shredded coconut flakes
1/2 cup all natural peanut butter
3/4 cups full fat coconut milk
1 teaspoon vanilla extract
1/2 cup dark brown sugar (I used coconut sugar)
1/2 teaspoon salt (omit if peanut butter has salt in it)
optional: melted dark chocolate
