Peanut Butter French Toast Sandwich

This recipe resulted from my frustration at gluten-free bread. All I wanted was a good peanut butter sandwich, but gluten-free bread is generally really dry and often just doesn’t taste like bread. But when you French Toast-ify gluten-free bread, it actually tastes good!
Ingredients
For the filling:
1 ½ – 2 inch piece of a very ripe banana
2 tablespoons PB2 (or regular peanut butter)
1 tablespoon milk (omit if using regular peanut butter)
For the French Toast batter:
2 pieces bread (white, whole-wheat, gluten-free, etc.)
1 egg
¼ cup milk
¼ teaspoon ground cinnamon
Pinch of salt
Maple syrup, to serve
