Peanut Butter Fried Rice
This recipe uses both of the greatest secret ingredients EVER (toasted sesame oil and powdered peanut butter) for a spell that is practically weaponized deliciousness, and makes a dinner that comes together in 20 minutes out of leftover rice and relatively fridge-stable kale! It’s the late-week dinner you’ve been looking for after a long day at the enchanting table!
1/4 cup powdered peanut butter (PB2)
2-3 Tablespoons water
1 teaspoon grated ginger (Keep ginger in the freezer- it’s easy to grate it frozen and it keeps forever!)
3 Tablespoons liquid aminos or soy sauce
1 teaspoon rice wine vinegar
1-2 teaspoons sriracha
2 Tablespoons toasted sesame oil
3 cups leftover cooked rice
1/2 bunch of kale, stems removed and leaves torn into bite-sized pieces
1/4 cup peanuts
1-2 cloves minced garlic
2 green onions, finely sliced for garnish (optional)
