Pickle Juice Coleslaw

A delicious coleslaw of grated cabbage, carrots and apples tossed in a creamy dressing, with vinegar and pickle juice to keep it bright.
Ingredients
1 small head green cabbage (1-1.5 lbs)
1 small head red cabbage (1-1.5 lbs)
2 medium sized carrots, peeled and grated
2 medium sized apples, grated
¼ cup chopped red onion
Dressing:
½ cup low fat mayonnaise
3 tablespoons juice from a pickle jar (I used dill pickle juice)
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
A few grinds of freshly ground black pepper
