It’s pizza in oatmeal form! This makes eating pizza for breakfast completely acceptable.
Ingredients
1/3 cup cooked and mashed potato
½ cup rolled oats
1 tablespoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 teaspoon polenta (cornmeal)
Several dashes salt and pepper
¼ teaspoon baking powder
¼ cup almond milk (or milk of choice)
1 tablespoon pizza/pasta sauce (such as marinara)
Toppings of choice, e.g. eggplant, mushrooms, bell pepper (capsicum), arugula (rocket), kale, olives and/or cheese
