Pizza Stuffed Potato Rosti

Two layers of grated potato, onion and herbs stuffed with melted mozzarella and sundries tomatoes, this dish is perfect as a main with a side salad, or as a brunch with a nice poached egg nestled on top.
Ingredients
1 small yellow onion, minced
4 cups grated Yukon Gold potatoes (3-4 large potatoes)
1 tsp oregano
1 tsp thyme
Salt and fresh ground pepper to taste
3 ounces fresh mozzarella, diced
10 sun-dried tomatoes, diced
2 tablespoons plus 1 teaspoon olive oil, divided
1 cup grape tomatoes, diced
1 cup mixed greens
4 poached eggs to serve (optional)
