Pumpkin and Chocolate Overnight Oats
Celebrate the holidays with pumpkin and chocolate! These overnight oats are gluten-free and vegan (and there aren’t any substitute foods involved). For something extra fancy, layer the oats in glasses!
For the pumpkin overnight oats:
⅓ of a very ripe banana
¾ cup pumpkin puree
1 ½ teaspoons chia seeds
1 teaspoon maple syrup (or more)
½ teaspoon ground cinnamon
⅛ teaspoon ground ginger
⅛ teaspoon ground cloves
½ teaspoon vanilla extract
⅓ cup rolled oats
½ cup almond milk (or other milk)
For the chocolate overnight oats:
⅔ of a very ripe banana
½ cup pumpkin puree
1 ½ teaspoons chia seeds
1 teaspoon maple syrup (or more)
1 tablespoon cocoa powder
½ teaspoon vanilla extract
⅓ cup rolled oats
½ cup almond milk (or other milk)
Toppings:
2 tablespoons chopped walnuts or pecans (or more)
2 tablespoons chocolate chips (or more)
