Pumpkin Cookie Dough No-bake Bars (Healthy!)
Pumpkin is my favorite (I’m sure you had no idea), so I had to try these No-bake Pumpkin Cookie dough Bars. Pumpkin? Cookie dough? Dark chocolate? You don’t need to say anything else. I’m in. Don’t be scared when you read the ingredients, I promise they taste amazing (I would know, my roommate and I ate a whole pan…). We made them in a pie tin, more like no-bake pumpkin pie, but the original recipe served them more like bars. Serve them how you want, I guarantee they won’t last long enough to be admired.
1 can great northern beans
1 can pumpkin puree
1/2 cup oat flour (we ground oats up in our food processor)
1 tbsp cinnamon
1/4 tsp salt
1/4 cup dates (pitted)
3 tbsp honey (want to make this vegan? Agave is a good substitute!)
1 tbsp vanilla
2/3 cup dark chocolate chips
1 cup dates (pitted)
1 cup raw almonds
