Pumpkin filled cupcakes – perfect for a Halloween party or simply an autumnal treat!
Ingredients
For the cupcakes:
125g caster sugar
125g self raising flour
50ml vegetable oil
50ml soy milk
3 tablespoons aquafaba
1/2 tablespoon vanilla extract
1/4 teaspoon baking powder
Pinch of salt
For the pumpkin filling:
1 cup pumpkin puree
1/4 cup caster sugar
1/2 teaspoon ground all spice
1/4 teaspoon ground ginger
For the icing:
25g vegan butter
60g vegan cream cheese
300g icing sugar
1 teaspoon vanilla extract
