The ultimate fall sweet bread: Pumpkin Ginger Bread! Ideally combined with a healthy spread of almond or coconut butter.
Ingredients
4 flax eggs – ¼ cup flax meal + ¾ cup water
1¼ cup pumpkin puree
¼ cup coconut oil, melted
¼ cup coconut sugar
2 Tbsp. maple syrup
2 Tbsp. molasses
1 tsp. vanilla extract
½ cup Bob’s Red Mill GF Baking Mix
½ cup buckwheat flour
2 Tbsp. coconut flour
1 Tbsp. grated fresh ginger
1¼ tsp. cinnamon
1 tsp. baking soda
½ tsp. baking powder
½ tsp. nutmeg
¼ tsp. salt
2 Tbsp. chopped pecans (omit for nut-free)
