Ingredients
1/4 cup coconut flour
1/4 teaspoon baking powder
2 eggs, slightly beaten
2 tablespoons pumpkin puree
1-2 tablespoon maple syrup (depending on how sweet you want them)
1/4 cup plus 1 tablespoon of milk of choice (I used unsweetened soy)
2 tablespoons natural peanut butter
optional topping: coconut whipped cream, maple syrup, butter
