This baked acorn squash stuffed with kale, apple, quinoa, lentils and sage is the ultimate fall meal, and it would even be perfect for Thanksgiving.
Ingredients
2 Acorn Squash
Cinnamon
1 Cup Quinoa
½ Cup Lentils
3 Cups Water (Divided for cooking)
1 Tbsp Olive Oil
Black Pepper
¼ Cup White Onion
4-5 Fresh Sage Leaves
1 Apple
2 Stalks of Kale
½ Cup Walnuts
1 Tbsp Maple Syrup
Optional: Extra cinnamon, fresh herbs to garnish
