Quinoa Stuffing Stuffed Portobello Mushrooms

These portobello mushrooms filled with quinoa stuffing are the perfect main dish for a vegetarian/vegan Thanksgiving!
Ingredients
4 large portobello mushrooms, washed, stemmed and “gills” removed
1 cup dry quinoa
1¾ cup water
½ bouillon cube (I used a “not chicken” flavored one)
2½ Tbs Earth Balance butter.
5 sticks celery, thinly sliced
1 large onion, minced
1 Tbs EACH fresh thyme, sage, and rosemary, finally chopped
2 – 4 Tbs vegetable broth
pinch of pepper
salt for taste (my bouillon cube gave enough saltiness, so I did not add any)
